Rendang comes from the word marandang, which means the cooking process to drain the water. That is why the rendang is correct and according to its nature is not wet by the sauce even though cooked with coconut milk. Make no mistake, although spiced almost the same, rendang candidates are cooked with a small fire will produce meat curry, while if cooked longer but not to dry the broth. Thanks to cooking techniques that take a long time that supposedly rendang can last up to 3 months without heating. Rendang has become a dish that is widespread since the Minang people began to wander and sailed to Malacca to trade in the early 16th century. Rendang is also mentioned in classical Malay literature such as Hikayat Amir Hamzah which proves that rendang has been known in Malayan cuisine since the 1550s. For the Minang community itself, Rendang has become a dish that always served in various traditional events as well as daily dishes. As a food that has become the food of the introductory tradition in a traditional ceremony, Rendang is alleged to have been born since the Minang people held its first event, roughly since the 16th century.

In the beginning, rendang can not be eaten by just anyone, because only the nobility is the one who can enjoy it. No wonder if this food is also loaded with philosophy, let’s say with the use of dagiang (beef) which symbolizes the traditional leaders (Niniak Mamak), Karambia (coconut) as a symbol of the intellectuals (Cadiak Pandai), lado (chili) Scholars and cookers (spices) as the symbol of the entire Minang society. Although known as authentic Indonesian cuisine, the rendang absorbs much of the Indian cuisine flavor in it, including the use of various strongly-flavored spices. This food was also favored by the European community because it also has a distinctive Mediterranean flavor that fits on their tongue.
